Makes approx ¾ c dressing


¼ cup balsamic vinegar

1-2 tsp Dijon mustard

1 tsp fresh lemon juice

½ cup high quality olive oil

1 clove garlic, minced

1 shallot minced (optional)

Stevia (optional, to taste)

Real salt and fresh ground pepper to taste.


In a medium bowl, whisk vinegar, mustard, lemon juice, garlic and shallot. Add olive oil in a slow steady stream while whisking until combined. Salt and pepper to taste. For a slight sweet flavor, add liquid or powdered Stevia to taste.
